On May 19th, 1981, George was born to his parent Roland and Pauline St-Pierre in Quebec Canada. He had a tough time growing up with school bullies stealing all his cash and clothes. This led to his father and his karate master training him some karate skills to defend himself in school.
After the death of his karate master, he took up boxing and wrestling before becoming a mixed martial artist. Before becoming a pro-MMA, George worked in a nightclub in Montreal as a bouncer. While in school, his family had difficulties paying for his school fees. This saw George taking some odd jobs like working as a garbage man to raise his school fee. At a tender age of 21, he had turned a pro artist with a Kyokushin black belt at his possession.

His first career match saw him defeating his highly ranked opponent by an undisputed decision. Later he won many awards which include UFC Welterweight Championship two times, UFC Middleweight championship, knock-out of the night among many others.
His mixed martial arts record stands at 28 matches which he went on to win a record 26 and lost only two. Out of the 26 he won, 8 of them were through the knockout, 12 by decision and six were by submission. In 2007, he lost his 2nd and last fight in MMA to underdog Matt Serra. A rematch between the two for the undisputed welterweight title was later held in Montreal on April 19th, 2008. This saw the match ending after only two rounds after Matt was unable to mount a significant challenge.
